Futomaki are fat sushi (Futo means fat in Japanese), very easy to make. They can be stuffed with many sorts of ingredients, however what makes my sushi special is my attempt at creating fusion food, by incorporating what we use in our exceptional french recipes, the Foie Gras, mixed with one of the best exotic fruit, the yellow mango.
First of all, you will need to chose your rice, then you will need to learn how to cook Japanese rice, and you will need to learn to prepare sushi rice.
Once you have done this, you will need to prepare the stuffing for the sushi.

INGREDIENTS:
4 cups sushi rice
4 sheets of nori (dried seaweed)
2 eggs
8 dried shiitake mushrooms
2/3 cup dashi soup stock
2 tbsp sugar
1 tbsp mirin
3 tbsp soy sauce
Pan fried Foie Gras, maintain warm when serving

PREPARATION:
Wash and soak dried shiitake in water for an hour before cooking. Slice the shiitake and put dashi soup stock, sugar, mirin, and soy sauce in a pan. Put shiitake slices in the pan and simmer for about one hour. Cool the seasoned shiitake in thin slices. Beat the eggs and add a pinch of sugar. Make a firm omelet and cut it into long sticks. Cut cucumber into long sticks. Fry the "foie gras" and cut in long pieces, sut the Mango in long stick shape as well.
You are now ready to prepare the sushi with Foie Gras and Mango
Put a sheet of nori on a bamboo mat and spread the sushi rice on top of the nori sheet.
